Recipe: Honey Vinaigrette

Born from the idea of marrying the tropical flavours of our Bourbon vanilla-infused honey with the freshness of a seasonal salad, this condiment has become a staple on our Mauritian tables.
The recipe is elegantly simple: three tablespoons of our vanilla honey, two tablespoons of apple cider vinegar, one teaspoon of Dijon mustard, a pinch of sea salt, freshly ground pepper and six tablespoons of extra-virgin olive oil. The secret lies in the emulsion: pour the oil in a thin stream while whisking vigorously until you achieve a smooth, homogeneous texture.
This vinaigrette pairs beautifully with a rocket salad, fresh goat cheese and macadamia nuts, a nod to our tropical terroir. It also perfectly accompanies a beetroot carpaccio or a simple mixed green salad with seasonal fruits. Store it in a small glass jar in the refrigerator; it keeps easily for a week and even improves with time.
